We present to you crunchy holiday cookies with cinnamon, sweetened with honey, and made with ground Fun&Fit oats instead of flour. These cookies are perfect for anyone looking to indulge in a guilt-free dessert.

Ingredients:

  • 150 g Fun&Fit oats (ground into flour)
  • 1 egg
  • 60 ml oil (coconut or sunflower)
  • 3 tablespoons honey
  • 1 teaspoon cinnamon
  • 1 teaspoon cocoa powder
  • 1 teaspoon baking powder
  • A pinch of salt
  • Optional: 1 tablespoon finely chopped nuts (almonds, walnuts, or hazelnuts)

Preparation Instructions

  1. Prepare the Ingredients:
    Blend Fun&Fit oats in a blender or food processor until they reach a flour-like consistency. In a bowl, mix the ground oats, baking powder, cinnamon, cocoa powder, and a pinch of salt.
  2. Wet Ingredients:
    In a separate bowl, whisk the egg, then add the oil and honey. Mix until all ingredients are well combined.

3. Preparation:

Gradually add the dry ingredients to the egg mixture, stirring until you get a uniform dough. If the dough is too sticky, place it in the refrigerator for 10-15 minutes to firm up.

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper. Shape the dough into cookies using cookie cutters to achieve your desired shapes. Decorate them with an egg white mixed with erythritol (a healthier alternative to sugar) to create decorative patterns.
